Danny Elfman
Klaus Schulze mid 1990´s. Especially live.
Chris Franke
Matthias Schuster
Frontline Assembly mid 1990´s; e.g. "Millennium".
Anders Herrlin, drum/synth/sampler programmer for Roxette and many other bands mid 90´s.
Robert Leiner on several albums, mid 90´s.
Jim Macmorran
Nigel Beaham-Powell & Bella Russell collaboration.
Orbital
Harold Faltermeyer
Michael Jackson on "History".

I remember Tony Banks of Genesis used one quite so officially (endorsement?).

I also recall Paul McCartney used what appeared to be an EIII. It was at a live concert and one could see an instrument up there with a logo "EIII" on it. However, at the time the EIII hadn't been launched yet! I worked as a product manager for the Norwegian E-mu distributor at the time and after a short conversation with E-mu's main offices in Europe (it was located in Scotland) it was soon sorted out: The instrument at stage had a fake logo - it was actually an EII.

A David Foster-album had the instrument listed in the liner notes - but at the time the EIII hadn't been launched. Maybe he used a prototype? :)
